Strawberry Cheesecake Bites

I’ve found about forty recipes on Pinterest that I want to try (surprise, surprise). This one though, combines two of my favorite things and seemed ridiculously easy.

Strawberry. Cheesecake. Bites.

I’ll spare you all the details, if you want the recipe just go to the link. A few tips though:

1) Recruit someone to help you cut/core the strawberries. Your boyfriend doesn’t count if he’s just going to sit and eat his dinner while you do all the work. JOEY.

2) Remember to put the cap back on the vanilla extract or Mom will knock it over while making meatball tunnel sandwiches.

3) Spoons are not the best way to try to get a highly viscous substance into a really tiny strawberry. You will feel stupid when, halfway through your struggles, your sister points out that a piping bag would be way easier. You’ll feel even stupider when you realize the directions SAID to use a piping bag.

4) Just swallow your pride and use the piping bag. Do NOT insist on the zip-lock bag, because the seam will break and you will get cheesecake filling all over yourself.

Try making them yourself! They’re truly delectable and actually, I imagine, not too bad for you since they’re 99% strawberries and cream cheese.
